Meal Planning-Chicken and Sausage
Happy New Year!
I hope everyone had a great New Year’s Eve and is snuzzling in for a fantastic day to rest. For the first time since the hubs and I have been together, we stayed in and went to bed by ten! I know-I think we are starting to show our age….Actually little man had a hockey tournament today, so we watched the netflix countdown and put the kiddos to bed by 8pm. Oh well, another year down and another to live! Oh the adventures for 2018!
So mommas, as we plan for our new year- I wanted to share with you about my LOVE for meal prepping and planning. It is so easy and saves so much time! First- I look at our schedule for the ENTIRE week. I plan to cook for four to five nights. Now sometimes we might go somewhere or be out and about- so take that into consideration. Also-think leftovers for lunches and for a left over night for the super busy nights. Our super busy evening is Tuesday. We rush for pick up, straight to dance class for sis and little man usually has hockey practice right after. Some nights we don’t get home until after 8. I usually bring snacks to keep in the car and very rarely we might hit up a drive through or Chic-Fil-A in between if there is time. But as a busy momma, I try to have the family eat healthy MOST of the time. However- all of us are usually looking for a real dinner by the time we all make it home.
So- have a plan. Lately I have been cooking extra on the weekend to have already prepared dinners and making sure my stash of freezer meals are readily available. Luckily most are no to very little sugar that I just have to pull the actual carb or starch out for myself. I have a big bowl of salad ready to go and my homemade dressings full to support my personal low carb lifestyle.
So for example next week:
Friday-Pulled Pork Nachos
Saturday-Bacon Cheddar Chicken with Roasted Potatoes and Salad
Sunday-Buffalo Chicken Soup, Beer Bread
Monday-Spaghetti (I pull some sauce for me and might add spaghetti squash)
Tuesday- Left over night
Wednesday-CP/FM Steak w/wine sauce, baked potatoes and salad
Thursday-Left over night
Another consideration to think about as you plan, look into your veggie draw, freezer and pantry. See what you already have as you make your list. Didn’t get to the broccoli this week, put it on for one of your first meals next week. This will save you so much money by not wasting what you have already bought.
Lastly- Meal Prepping for lunch, as you plan, think about what you need. I eat three meals a day. Usually eggs for breakfast, a protein and veggie for lunch, and a low carb option for dinner with the family. (I do the same thing for the kids and hubs for lunch by planning and prepping for what they need.) My favorite low carb lunch option is chicken sausage and veggies. See pictures below. I cut up chicken sausage links and add all of my favorite veggies to my dutch oven then sauteed until done. Use my portion containers and fill them up. Throw them in the fridge and it makes it super easy when I am leaving in the morning. YUM!
